Reorganizing the fridge..

Afternoon lovelies! We just got back from a homeschool activity and I feel like we are all dragging a little bit. I guess all the fun wore us out. The baby is sleeping and the older kids are enjoying some downtime reading. With all this quite, I thought I'd hop on here and get a post ready for you. I also may be procrastinating the math lesson I have planned for today. Another few minutes of rest won't hurt right ::wink wink::? 


I have my grocery hauls for this month written out and filmed, I just need to edit the videos. I am hoping to get to that soon. Hopefully ya know before September is over. Fingers crossed on that one. Since I still have videos to edit, I decided to share a quick post about how I reorganize my fridge throughout the month to keep food waste at a minimum and things nice and clean. 

Every week I take a good 20 minutes and I reorganize the fridge. I look at what leftovers we have, what produce needs to be used up, and I check out what condiments are nearing their expiration date. As I go through the leftovers, I make plans for the items. If I have leftover meat, I try to plan it for a meal in the upcoming days. Leftover meat can be thrown into salads or casseroles. If I am not able to use the meat right away, then I freeze it for later use. Today I froze a cup of leftover taco meat.  I will use it in a Mexican pizza next month. I also froze leftover pasta sauce, ground sausage, and enchilada sauce to be used later as well. I'm thinking a supreme pizza and some type of enchilada casserole will be on the menu plan next month.



If I have veggies that are leftover, I do the same. I actually have a bag in my freezer, where I put leftover veggies. Once the bag is full, I use it to make veggie soup.

I clean up any spills in the fridge and restock pudding cups, applesauce, cheese, deli meat, etc as needed. I basically shop my pantry or freezer to restock. Shopping my pantry and freezer allows me to go longer between shopping trips.

Taking just twenty minutes (or less for normal people. I'm an OCD cleaner when it comes to the fridge) a week, allows me to get organized. I find that keeping things in order allows me to prevent food waste, which ultimately saves us money.

Also last night our dinner was so yummy and simple! I bought a Caesar bagged salad and added some leftover chicken. I then served it with banana bread (minus the add ins) and watermelon. It was a hit! Also we are trying out this taco braid from 365 Days of Baking and More tonight. I can't wait! I'm using my basic dinner roll dough in place of the store bought crescents. :)

Gearing up for baby grocery hauls...

Afternoon friends. Baby girl is taking a nap, which means I have a few minutes of hands free time. To take advantage of that time, I wanted to hop on here and get a few posts up for all you lovelies.

Today I am sharing two grocery haul videos, which I filmed before Tallia was born. These are my "Gearing Up for Baby" hauls. Everything you see in these hauls were items that were a HUGE help to me in the days leading up to Tallia's birth and in my postpartum time afterward. Having our pantry, fridge, and freezer stocked with easy to make items was a huge blessing to my family and I. We were able to use up all the items before our move. Any pantry items left came with us to Arizona.

5 Ways to Start Living Within Your Means...


It's Monday friends, which means I have a new video up on my channel for you all. Today we are chatting about living within your means. I recently gave a budgeting class on this very topic, so I thought I'd create a video where you and I could chat on this very same topic as well. 

Living within your means has been such a game changer for myself and my family. It has provided us with a strong financial foundation and has allowed us to be comfortable in our finances. Because we live below our means, we are not stressed about whether we will have enough money to pay all the bills and any extras that pop up. We are able to have money left after each pay period, have money for our emergency funds and savings, and are able to provide a little extra for our family as well.

10 Things I Don't Spend Money On...


Last week, when scouring Pinterest for some articles to read, I came across a post by Lisa at The Lazy Budget Chef. Lisa shared 12 things she doesn't spend money on. I thought her list was full of great ideas. Some I already do and some I don't.

This got me thinking...

What would my "don't buy" lists consist? I came up with some items and then I asked you guys. You had some really great ideas, which really inspired me. I've included the top ideas from our compiled list.

Paper Towels - I stopped buying paper towels a few years ago. I found that not only was it better for the environment, but I could knock quite a bit off my monthly budget. We use rags for cleaning up. These are great because when you've finished cleaning, you can just toss them in the wash. One wash cycle and they're like new. I keep a reusable grocery bag near my washer. I toss used rags in there. When the bag's full, I do a load :)

All-Purpose Cleaner - this is my favorite thing to make homemade. It cost very little and is safe for the whole family. Just mix vinegar, water, and some essential oils together and you're good to go. Check out this tutorial to make some today.

Greeting Cards - if you know me in real life, then you know I am NOT a huge fan of greeting cards...especially with birthday gifts. Yes, sometimes it is nice to get a card in the mail and I love my grandma's annual holiday cards, but I think greeting cards are expensive. $3 or more for something that will just get thrown in the trash? No thank you. Going homemade on cards is a great way to save. You get to still give the sentiment of a greeting card, without spending a bunch of money. I also think homemade cards are so much more personal. I love to create 4x6 prints via picmonkey and print at Costco. You can print for under 50 cents a piece. Much better than $3+ right?



Pre-Made Cookie Dough - I've found that making cookie dough at home is not only cheaper, but you get more bang for your buck. Chocolate chip cookie dough is my favorite. You can double batch it and either freeze the dough or freeze the baked cookies. This helps to have some yummy treats always stocked in the freezer. I also find that when I stock myself with yummy items, I'm less likely to toss treats into my cart when I'm grocery shopping. This keep impulse buying to a minimum.



Freezer Meals - we all love having a few saving graces in our freezer. Having a few quick casseroles or lasagnas is great when you don't feel like making dinner or you need to bring a meal to a friend. I have found that doubling recipes when I make them allows me to stock the freezer without needing a full freezer cooking day. Also, making your own freezer meals means you know exactly what's going into your food.



Garbage bags - Jen and Ashley shared this idea and I thought it was brilliant! They save by reusing plastic grocery bags. Jen says "I don't buy garbage bags. We use the sacks from the grocery store for most of our garbage and our recycling goes into our garbage can without a bag around it. When the grocery bag is filled, it goes outside into the big garbage can and (hopefully) keeps our kitchen from stinking up ;)". Ashley said "I reserve all my stuff that gets stinky in the fridge till the night before garbage night, that way we only have to take out the garbage once a week and reduce the number of bags we use." Brilliant ladies!!



Baby Wipes and Diapers - Going the cloth route is a great way to save. Dayna said "Cloth diapers & cloth wipes (cut up squares of old tshirts). Wipe solution is water with a drop of lavender or tea tree oil. Saves so much $!"


Music CDs - I love listening to music and I use to spend a lot of $$$ on either CD's or singles via Amazon. I could easily spend $20+ on music in one shot, then I learned about Spotify (thank you Tanya). Hubby and I pay $10 a month and we get unlimited access to music. It's been a great alternative to how I got my music before.



Cable - you know I'm a BIG supporter of Netflix and hulu. We haven't had cable in over 8 years. We spend less then $20 a month and we have a huge library of shows for the whole family.



Land Line- we joined the strictly cell phone club a long time ago. We realized that we didn't have a need for a landline anymore. All of our friends and family have cell phones and we have unlimited minutes and text, so it makes sense. Save yourself some money and kick the land line.

LIVE Budgeting Class Video...

Hi there! I had such a fun time yesterday chatting with so many of you lovelies on youtube! I held my first ever LIVE budgeting class and it will definitely NOT be my last!! It was such a neat experience to be able to interact with you guys as I gave the class.  We had people from across the nation and even from Canada! Seriously so cool! As promised I have the recorded video for all of you who were not able to be a part of the live stream event. I recommend fast forwarding about ten minutes in, since I had a few technical difficulties at the beginning. This was a new experience for me, but with some help from a few viewers I was able to figure it out :)

Morning...errr......afternoon......it's been a long day can you tell? I'm not even sure what time of day it is haha! The Tuesday Mama struggle is real people! I swear :) We have been busying working on some writing projects and cleaning up our house. Somehow the weekend caused a tornado to run through and we are just now picking up the aftermath.

I do have  a few spare moments though (the kids are having computer turns and I am enjoying this bit of quiet me time), so I wanted to share my freezer clean out for this month. I have a freezer chest and a fridge/freezer combo. Both reside in my kitchen. Is it the prettiest thing to have in your kitchen?...umm..not really, but I sure do love all the extra space it allows me for food storage. So practicality outweighs aesthetics in my kitchen.

Freezer Clean Out: January Edition

With us focusing on #NOSpenduary, I thought it was probably time I dig through that freezer of mine. I pulled everything out of my freezer chest and place it on towels on my floor. I try to do this before every monthly shopping trip, but last month I didn't (I blame the holidays) and this month I didn't stock up on meat or anything (only the essentials), so I didn't go through it either. Anyways back to the cleanup....I pulled everything out, so I could see what goodies were buried in my freezer. I also pulled out all my frozen milk from the freezer above my fridge. They were scattered in both freezers and I really wanted to get them all in the same place. We were given a bunch of milk from a dear friend at church, so we have had an abundance lately. I haven't bought milk in a month! (thank you Ing) I like to keep my milk at the bottom of my freezer chest, since they're the bulkiest item in there.

Freezer Clean Out: January Edition

Once everything was pulled out, I took stock of what I had. I grouped my meats together, my cheeses, veggies, fruits, purees, etc. Keeping things together allows me to have a better idea of what is in there. I also found a few freezer meals I had forgotten all about. Is it sad I felt like it was Christmas when I found three tubs of soup, just ready to be eaten this winter? I did my own little happy dance. That was three meals that now I didn't have to plan. I could just pop them in the crock-pot and call it good. Having those freezer meals reminded me how much I love making freezer meals. I really need to get back into making them. Note to self: request freezer cookbooks at the library

Once I organized everything, I chipped all the ice off the insides of my freezer chest. I used a plastic spatula, so I wouldn't ruin the insulation. This took less than ten minutes. Once I was done my freezer was looking all kinds of purdy. There is something about a clean, ice less freezer....it makes this mama feel good....like I tackled and conquered a task with extreme determination....chipping ice is no joke people...oh man does that make me sound lame? Yes? No? Don't tell me. Let me stay blissfully unaware:)

Once the freezer was cleaned, I decided the fridge couldn't be left out. I pulled everything out and gave it a good wipe down with my all-purpose cleaner. I am a a bit of a germaphobe and dirty fridges are the worst! I try to stay on top of ours, as much as I can.

So now that I just spent far too long talking about my freezer cleanup, let me share with you why cleaning out your freezer is important....

A lot of times we stash things in the freezer, thinking "no worries it is in the freezer it can't go bad". Wrong! It can! Nothing last forever, not matter how much we wish it did. Going through your freezer allows you to use up the old stuff before it goes bad. It also lets you see what you have, so you don't rebuy or over buy on something. Preventing this saves you time and money. I am all for saving me on both of those. So check out your freezer and give it a good clean. Knowing what you have stashed in the freezer and fridge will help you plan meals better, which ultimately keeps that family of yours in happy town:)

Starting The Year Off Right with a No Spenduary Challenge
Good morning lovelies! I hope that we are all ready for a fun filled day or at least a day of lounging in our pjs and catching up on that stack of movies from the library that aren't going to watch themselves. As you can guess, I will be doing the latter :) 

I pulled myself away from my Hunger Games marathon, to share with you a fun challenge I have going on this month that I think you all will want to join in on....I am keeping my fingers crossed people. This month I am teaming up with Lydia, from Frugal Debt Free Life, to bring you a No Spenduary Challenge. Sounds fun right! Seriously it will be.....I promise! Scout's Honor....wait I wasn't a scout.....ok....cross my heart.

I really want to start this year off on the right foot. This January my family will be committing to spending less. We will be paying for our basic needs - utilities, groceries, etc. We will be paying all of our need to pay bills and we will be using money already allocated to help celebrate the girl's birthday later this month. Other than that we will be keeping out wallets closed and our pennies in our piggy banks.

What it does this No Spednuary Challenge mean? It means that I will not be thrifting this month...so no new videos about my fun finds at Goodwill or DI. I know! I know! Let's all shed a tear about that one (I will get my thrift on in February though. Don't worry). We will also not be eating out, purchasing music from Amazon on my phone (gaw this will be a hard one), getting drinks from Circle K, or buying things just because the price is right. We will be foregoing all of these extra expenses and will be saving that money. All of our categories in our budget, other than the need to pay items, will also not be used this month and will be saved.

We have a few financial goals for the year. Hubby is going working towards some certifications for his dream job, we have a few projects around the house we want to get done, and we have spring planting coming up in a few months. I am hoping that with the money saved this month, we will be able to make a dent in those expenses, we know will be coming up in the near future.

Having a whole month dedicated to spending as little as possible, is also great to put your spending in the spotlight and get you in the budgeting frame of mind for the new year. I think every once in a while we need a refresher, to make sure we are spending money wisely.

This challenge is one that has little rules. The only rule is to save as much as you can. Everyone will save a different amount. We all have different budgets, that are personalized for the people living them. If you can not do a complete "No Spednuary" then pick one thing you want to cut back on this month. Maybe it is those coffees you get from Starbucks in the morning. Cutting out Starbucks and going for a thermos full of homemade coffee, will save you tons! If you spend $2 a day on coffee and you forgo that expense this month. You would have saved $62 over 31 days! That's amazing! Remember that every penny adds up. Money not spend, is money saved.

When Hubby and I were in the market for buying a home, we ended up doing things that were very far from the norm. While Hubby was in the military, we had saved up over $30,000 to use as a down payment on a home. We thought Hubby would get out of the military, find a job, and then we would find our dream home. We had made a lot of plans and were excited to start seeing them unfold. Then economic crisis happened and we had to change our plans. Hubby wasn't able to find a job, so he decided to go back to school full time and get his degree. We were living in an apartment and we were going to have to start tapping into our savings to cover our rent. This is what we thought was our fate until Hubby had an idea. He said that since we had money saved up, we should see what we could get in regards to a home for only what we had in our savings account. We decided to pay cash for our home. We knew that $30,000 wouldn't buy us our dream home, but it would buy us something to live in and fix up throughout the years. We went with a Realtor and told him our plan. Only a few houses were within our very limited budget. We found a home for less than what we had in cash, which left us a bit of money to fix it up. We bought a trailer, who's previous owners had recently started renovations on. It was rough, but it was ours. Hubby worked tirelessly on that trailer, day and night. He put in a kitchen and fixed that rotten flooring that was in some some of the rooms. It wasn't perfect, but it was ours. This house would become our little family project.

I remember when Hubby first told me of his plan, I was less than thrilled. This was not what I had envisioned. Then reality hit and I remembered how thankful I should be for the situation we were in. When so many around us were foreclosing on their homes, we would be able to pay cash for one and not have any monthly mortgage payments. That in itself was enough for me to get on board. I also liked the idea of having a clean canvas to create with. No matter the current state of your home, don't get discouraged. Through a bit of creativity and hard work, you can create something beautiful.

There were a few things that helped me, as we lived in our fixer upper. Being content with what we had, being frugal, and being patient all helped us in fixing up our house without going into debt. We didn't want to have to pay for renovations years down the road because we charged them on a credit card. We shopped smart and have continued to work on our home to make it perfect for us.

Be Content with What You Have

Being content is one of the best things we can do for ourselves. Sometimes we get so focused on where we want to be tomorrow, we forget to enjoy today. If there are things that you would like to change about your home, that's fine, but don't let it consume you. Give yourself a “blessing check”. Have you heard of that before? It is where you count your many blessings and name them one by one. Doing this, puts things in focus. No my fixer upper was not absolute bliss, but my family was together and we were making things work. We all have been given so much and I think it is important to take a step back now and again to see all that we have been given.

I think it is also important to be ok with where you are at right now. I have seen so many people who are in a hurry to get a bigger and better thing, whether it be a house, car, you name it. Be content with what you have. Don't rush into things, just because you want that immediate gratification,

Be Patient

When you are wanting to redo things in your home, be patient, Rome wasn't built in a day and your home can't be fixed in a day either. Focus on the things you can change right now, rather than the things you can't. If you think your front door is looking less than fabulous, but don't have the cash to redo the door, liven it up with a fun new wreath. It is a little fix that can brighten up a dreary door and have you feeling better about your surroundings. This is something I learned as we have lived in a fixer upper. When we had cabinets without doors, I got creative and used suspension rods with curtains. When we couldn't afford that new hardwood floor I wanted, we got creative and painted our existing flooring. It is those little things that create a homey inviting space. A house does not have be dressed to the nines to become a home. It is the people living within those walls that make it home. Never forget that.

Be Frugal

When you are planning to upgrade things in your house, do it with a frugal mindset. Going into debt to fix our house, was not something we wanted to do. When we have wanted to fix things in our home, we figure out how much it will cost to complete the project, plus a little extra for the unexpected, and save up the money. Being able to pay cash for the upgrades, is a relief. It is no fun to charge an upgrade and continue paying it off months after the project is done. Be patient. It will feel even greater if you know you are not still paying for whatever project you just completed.

There are a lot of places where you can find discounted items to fix your home up with. Thrift stores sell all kinds of home goods that you can use to decorate your home with. THe majority of our home is decorated with items I made or found at thrift stores. Another place you can go to is The Habitat For Humanity Store. They sell all kinds of items to help you with your home projects. Hubby has found fencing, cabinets, tiles, and light fixtures there. Buying used and saving the difference really helps keep the cost down on projects around the house.

When we first moved into our home, I wanted to paint the hallway, but we didn't have enough money for paint. I shared this with my family and it turned out that many of them had paint cans in the garage leftover from when they painted there own homes. The paint also happened to go with our color scheme. Reusing something that someone else was going to throw away really helped us stay within a limited budget. 

No matter what, give yourself a bit fo grace. Don't try to keep up with those around you. Do what is right for your family and do it on a budget. You will never go wrong when you set a budget, pay cash, and create beautiful on less:)

How to Pay Off Medical Bills Now...

The one thing I get asked the most, when dealing with debt, is what do you do when medical bills happen. For all of us, we will receive medical treatment at one time or another in our life. Whether it is for that flu that landed you in the ER or that appendix you needed removed, either way you will find yourself needing medical care and receiving bills later on for that care. I know many people who say “just get insurance and you'll be ok”, but this is not always the saving grace. Even with insurance, medical bills can rack up quicker then we thought was possible. Having a plan for when medical emergencies happen, will help you when you are in a time of need.

For most medical visits, you will pay a co-pay. Your insurance should be able to tell you what that co-pay is, if you have one. Multiply your co-pay by how many people in your family. This will tell you how much it will cost for each member to have a yearly checkup. For my family of four, with a $30 co-pay, we would need to save $120 a year just for that yearly doctor checkup. Divide that by 12 months and we only have to save $10 a month for our yearly doctors visits. Breaking it down and adding a little bit each month, as opposed to paying a lump sum is much more doable. We do this with other medical expenses as well.

If you know how much it cost to got to the dentist, receive shots, etc. than you can plan ahead for it. It is so important to plan ahead for these medical emergencies, because no matter how much we don't want them to happen, they will. Doing a bit more work now, will save you later on.

If you have had a medical emergency and now find yourself in a pile of debt, no matter how much you planned ahead, all is not lost either lovelies. I promise. A few years ago we had a similar experience, where all of our planning ahead only made a small dent in our medical expenses. Hubby got sick and had to spend a few days in the hospital. Many tests were run and when it was time to give him a clean bill of health, we had racked up thousands of dollars in hospital bills. We were forlorn. We had no clue how we would pay that bill. At first we were frustrated. All of our careful budgeting and work had only made a small dent in our bill. We were able to use our emergency fund and the funds we saved into our medical category, but we still owed more. Hubby and I didn't know what we were going to do remove to ourselves from the mountain of debt we were in. It was quite a trying circumstance we found ourselves in. I am so thankful for the doctors that helped him and the treatment he received, but now we were left with a mailbox full of doctor bills, we couldn't pay. If only I could lock up our mailbox and tell them we weren't accepting mail anymore, but that wasn't realistic. We cannot lock our problems away or bury them in a hole. They will still be there. We can't run from them. No matter how scary or nauseating it may be to face them, we must. We must take control of our finances because if we don't, then who will?

I remember falling to the floor in the bathroom and crying. I seem to have a history of crying on bathroom floors. I became a weepy mess on that tiled floor. I had no clue what we were going to do. We had been living frugally. Our budget was tight, but we were making it. I felt like we could finally breath, until a curve ball was sent our way that landed hubby in the hospital. As I cried, I prayed. I prayed really hard. I knew that everything we were going through was beyond me. I was at a lost of what to do. Then a sweet message came to me, “You already know what to do”. I paused and thought, “I do?” The things was, I did know what to do. I had learned years before what to do to get of credit card debt. Those steps were exactly the same steps I could use to get us out of medical debt now. It would be a lot of hard work and require sacrifice on our part, but together as a family we would get through this. After that, I pulled myself up off that bathroom floor and dried my tears. I knew I was not alone. I had a Heavenly Father who loved me and was aware of my circumstance. I could use my own knowledge to take control. When you stand up and take control of a trial, it is such an empowering thing. It makes you feel like you can do anything.

We took out all of our medical bills and categorized them by amount, less to greatest. Just like you do when getting out of credit card debt, you can do the same for medical bills. We started putting any extra money we had towards the smallest bill and we continued this pattern, using the snowball technique, until all of our medical bills were paid off. It took quite sometime, but we were able to do it. If we ever received extra money, we put it towards our debt. What a wonderful moment that was when we sent in our last payment. It was amazing. It had been hard, but as a family we did it.

Another thing did was that we called all of the doctors offices and the hospital to explain our situation. We explained that we wanted to pay our bills, but could only do so much each month. By being honest, we were able to get set up on payments plans. Some doctors offices also reduced our cost for paying some bills off in one lump sum or by calling and talking with them about our circumstances. I think the more honest you are the better. Doctors want their money, they don't want to send you to collections. Explain your situation and what you could realistically pay. 

Hospitals are use to working with people. Hospital stays are expensive, so they have divisions that work with people to get their bills paid. When we started out our hospital debt was over $70,000. That was astronomical. We couldn't pay that off and we didn't want to file bankruptcy. We weren't sure what to do. After talking with the hospital, they worked with us. They work with different non-profit charities that help pay hospital bills like that. We were able to get our bill reduced to under $10,000. That was such a blessing. Every spare penny we had, went towards that debt. Any money I made from this blog went towards that debt. It can be done. We said no to going out a lot, but we knew that doing a bit more work now, would help us later on. 

If you find yourself in medical debt, know that not all hope is lost. Bankruptcy does not have to be the answer. With a little hard work and dedication, you can make a difference in your life!

October Menu Plan + Recipes

Happy Saturday Lovelies! It is a new month, which means it is time for a new menu plan! This one is yummy!

I have a bunch of new recipes for you all to try out and a few oldies as well! From Chicken Alfredo Pizza to French Dip Sandwiches, your family will enjoy what you prepare for them this month! I have planned out everyday for October. You will notice I have days for pizza night, leftovers, and of course a freezer/new recipe night too!

Don't forget to shop your pantry first, before making your grocery list. Check expiration dates in your pantry and fridge, so everything gets used before it expires.
