Haven: Day Three

Day Three of Making Your home a Haven started out a little late. My littles were already up watching cartoons and I was a wee bit groggy from a late night of sewing. Once I actually pulled myself out of bed things seem to fall in place. I was able to make blueberries muffins for Breakfast. They were very yummy with some homemade strawberry preserves on top.

My Mom received this Great American Recipe in the mail and graciously donated it to my recipe box. They were simple to make and delicious. Here's how to make them:

1 1/2 cups of flour
1 tbsp. baking powder
1/2 tsp. salt
1/4 cup sugar
4 tbsp (1/2 stick) unsalted butter, melted and cooled
1 large egg, beaten
3/4 cup, plus tbsp milk
1 cup blueberries (I used dried, since I didn't have fresh)

1) Preheat oven to 400 degrees. Line a muffin tin with 10 paper muffin cups or spray with nonstick cooking spray. Fill remaining two empty cups halfway with water.

2) Sift flour, baking powder, and salt into a large bowl. In a separate bowl whisk together the melted butter, egg, and milk. Pour the wet ingredients over the dry ingredients and whisk until just blended (mixture should be slightly lumpy).

3) Add the blueberries to bowl and stir just enough to combine.

4) Divide the batter evenly among the prepared cups. Bake until golden, 18-24 minutes. Remove the muffins from the pan and transfer to a wire rack to cool. Muffins are best served warm.

After breakfast we were able to begin school. The kids are loving our new morning routine of school. They loved picking bumble bees for scriptures. It just warms my heart when they get excited to learn more about the gospel. For lunch we made sweet potato chips with hot dogs and applesauce.

Our day has just seemed to flow smoothly from one thing to another. We didn't do a huge amount. We stayed in. My bed is still piled high with laundry, but the bathrooms now are cleaned from top to bottom. We let open the windows and enjoyed the cool breeze that flowed through the house. It was a relaxing day with my littles. I am so thankful for this day and God's hand in everything we did. I now must end as I have been invited to a red head's tea party for dessert and fruit punch. Have a wonderful night:> And I hope you are enjoying making your home a Haven this week. I know I am.

  2. Hi Danielle.

I can't remember if I commented on this particular post of yours or not! Sorry if I am repeating myself!

Blueberry muffins with strawberry preserves sounds delicious! I'd love to see what you stayed up late sewing...that is one skill that I have yet to master. I think practice makes perfect and I'm scared to start. Just keep looking at my sewing machine and feeling guilty as it longingly calls my name! LOL

Now, how about a recipe for those sweet potato chips? :)
