Alright lovelies! I am like two days late, but I was bound and determined to get last week's meals on the blog. I have recipes and some tips and tricks thrown in as well. I hope you are all having a fabulous week so far. I will try to hop on here soon. I have so much more to share with you all this week. Enjoy:)

Monday 1/19/15- BBQ Meatballs, Mashed Potatoes, and Steamed Zucchini

When I did a freezer clean out this month, I saw that I had a lot of ground turkey and ground turkey sausage. A few months ago I stocked up when ground turkey was $1.99/lb. I bought a case and it has been lasting us for a long time. When I counted them up, I found that I had 20 lbs of ground turkey in my freezer. I decided that some freezer cooking was needed to be had. I made some oven baked meatballs to put in the freezer. I made a big batch of meatballs on Monday. I divide my oven baked meatball recipe into three meals. I used one serving that night for BBQ meatballs. This is one of my kids favorites. Meatballs + a bottle of BBQ sauce= a quick and easy meal. I used up leftover BBQ sauce I had in my fridge on this recipe too!

For the mashed potatoes I cooked my potatoes in the pressure cooker and then threw my cooked potatoes into my mixer. I added cream cheese, butter, garlic salt, and some milk. They were creamy and delicious!

I steamed zucchini in my rice cooker :) Yum!

Tuesday 1/20/15 - Crock-pot Chicken Legs with Potatoes and Carrots

This was one of those "throw everything in that needs to be used" sort of meals. I had found chicken legs at the bottom of my freezer when I did my freezer clean out. I was super surprised when I dug these bad boys up. I thought I had used all my chicken legs last month. This was a nice surprise, since chicken legs are one of Libby's favorites. When chicken legs are on the menu, she becomes a wild animal. No joke people. I am always amazed how she clears the bone. That girl commits and leaves nothing behind. I also had some potatoes and carrots I wanted to use up before getting my Bountiful Basket this week, so they were thrown into the crock-pot as well.

I placed my chicken legs, vegetables, and seasoning in the crock-pot and allowed them to cook all day. When Hubby got home from work in the evening, dinner was ready to go.

Wednesday 1/21/15 - Lentil Burgers with veggies and fruit

A great way to save money on groceries is by working in items that are low cost. Using lentils in place of meat you save. You also are able to clean out that fridge of your sby using up eggs, veggies, etc. I love making patties like these towards the end of the month when I want to start cleaning out my fridge in preparation for the upcoming month's shopping trip.

You can find the recipe I used here. It came in this month's Family Fun Magazine. My grandma got me a subscription  and I have loved trying out the different recipes in there.

I served ours with veggies and crockpot mac and cheese. The mac and cheese was ok, but everything else was yummy

Saturday 1/24/15 - Tilapia with Rice and Steamed Veggies-

This was a super easy meal to make. I purchased fish fillets at Wal-Mart in a family value bag. They were all individually packaged. I bought the bag of tilapia fillets for under $9 and was able to use half on this night and the other half will be saved for a meal sometime next month. I served my fish with this simple garlic toast recipe I shared a while back on the blog. This is a quick garlic bread recipe and is one I use a few times a week. I love it!

Sunday 1/25/15 - Baked Potato Night

On Sunday we had family over for dinner. My Aunt is in town from back east and I really wanted to be able to have the whole family over for dinner. Sundays are sometimes hard for me because w eget out fo church at 2 and then we eat lunch. With eating lunch so late, sometimes hubby and I give the kids leftovers and we eat some later on when they've gone to bed. On this night I had t come up with something that was filling, but also not too heavy for us. I choose simple baked potatoes. I put out veggies, cheese, and sour cream for topping and I served it with a greek salad. It was really delicious and perfect for a busy Sunday night with family:)

Monday 1/26/15- Italian Eggplant Parmigiana

I recently checked out Mormon Mama Italian Cookbook from the library. I've been wanting some yummy Italian food, so this seemed like a great pick for this week's meal plan. I checked out my fridge and then devoured the pages of the book. When I saw a recipe for baked eggplant, I knew I needed to make it. I have been really like cooking with eggplant. It is a great way to substitute meat in a meal and it is good for you too!


Tuesday 1/27/15- Olive Garden

Since we have family in town from back east, my parents took everyone to Olive Garden. Thanks Mom and Dad. Our food was delicious! We brought home the leftovers and will be able to eat the leftovers tonight for dinner. Yum!

Menu Plan Monday: Baked Steak + Gravy, Chicken Alfredo Pizza, Maple Chicken Wings, and More!

Morning lovelies! I am writing this post on Friday, since I know my hubby is coming home this weekend and the last thing I will want to do is menu plan, so I am trying to get some things done ahead of time. I plan to do nothing but hug that man of mine this weekend. He also has some red heads that are missing him like crazy, so we are going to be catching up on some family time.

This week's menu is printable and consist of five recipes. I have included ways to make your meals stretch and roll over into other meals throughout the week, so you actually can end up with 7-8 meals. More than enough for the week. I always like to have a leftover day and usually a homemade pizza night on Fridays. We sometimes pair this with soda, I buy it when it is 99 cents or cheaper. This is a real treat for my littles on Fridays:) Pop in a movie and you have a quick and easy family night in the making!

This week all of my recipe's come from 101 Homestyle Favorites by Gooseberry Patch. I found this gem via ebay for just a few dollars!

Weekly Printable Meal Plan with Recipes #6

Good Morning Lovelies! I am a tad late getting this menu up. Downton Abbey was a 2 hour show last night and oh my goodness! Did you all see it? So good! I swear they keep me on the edge of my seat every week. I won't give out any spoilers, but if you haven't watched it or caught up, please do so. It is getting better and better every week:)

Now for the menu this week. You will find both the meal plan and the recipes in this post and in a printable format. Also consult your pantry list before shopping. Make sure to restock what is running low. This month we stocked up on our beans and grains. I shared a picture on instagram, when hubby did the shopping for me this month. We found 25 lb bags of beans for under $20 at the lds cannery. So make your grocery list and start saving money on your groceries this week!

Slow Cooked Pork Wraps

1 lb. Pork Stew Meat
1 can Italian stewed tomatoes w/ green chilies
1 tbl red wine vinegar
3 green onions chopped
1 yellow bell pepper
garlic salt- season lightly

8-10 flour tortillas
mozzarella cheese for topping

  • Place all ingredients (minus tortillas and mozzarella cheese) in slow cooker. Cook on low 5-6 hours. Serve in flour tortillas with cheese sprinkled on top.

Cheesy Broccoli Soup

1 can (10 3/4 ounce) condensed cheese soup
1 cup milk
2 cups chicken broth
1 soup can filled with water
2 cups fresh broccoli (frozen can used also)
1 cup shredded cheese

  • Put all ingredients in crock-pot. Cook on low for 4-5 hours. Serve with Rolls.

  • For a nutritional boost add 1 tbl of flax seed & wheat germ. Your family gets a boost of fiver without even knowing.


Chicken Cutlets with Apple Celery Slaw

4 chicken breast (boneless, skinless)
Salt & Pepper
1/4 cup bread crumbs
1/4 cup sour cream
3 tbsp olive oil
1 tsp Dijon mustard
1 tbsp lemon juice
2 stalks of celery, thinly sliced
1 granny smith apple, cut into matchsticks

  • Slice chicken into halves to create 8 chicken cutlets. Season with Salt and Pepper. Coat in bread crumbs.
  • Heat 2 tbsp of olive oil in a skillet over medium heat. Cook chicken until golden brown on both sides.
  • Meanwhile in a medium sized bowl, Combine mustard, lemon juice, and sour cream. Add celery and apples. Toss to combine.
  • Serve with cooked chicken

Sunrise Breakfast Burritos

6 eggs
1/4 cup chopped spinach
1/4 cup Parmesan cheese
6 small tortillas
1 tomato chopped
creole seasoning

  • Scramble eggs. Add veggies and cheese. Serve in tortillas with sour cream and fruit.
Beef Taco Skillet with Cornbread Waffles

1 lb ground turkey/beef
1 can condensed tomato soup (10 3/4 ounce)
1 cup water
1/2 cup salsa
1/2 cup shredded cheese.

-Cook beef in skillet until browned. Stir often to separate the meat. Pour off fat. Stir in soup, salsa, and water. Heat to a boil. Reduce heat to low and cook for 5 minutes. Stir. Top with cheese and serve over cornbread waffles.

To make corn bread waffles use the ready made cornbread mix found on www.blissfulanddomestic.com Cook cornbread in a waffle maker instead of the oven.

  • You can also serve over rice for all you non-cornbread lovers.

Pancakes with Apple Pie Syrup

Use your favorite pancake recipe or use mine below, using a ready-made-mix

Pancake Mix
10 cups all-purpose flour
2 1/2 cups instant nonfat dry milk
1/2 cup sugar
1/4 cup baking powder
2 tbl salt

Combine all ingredients in a large bowl. Stir together to blend well. Put in a large airtight container. Label. Store in a cool, dry place. Use within 6 to 8 months. Makes about 13 cups of pancake mix.


Perfect Pancakes
for a variety add your favorite fruit to the batter
or chocolate chips

1 1/2 cups PANCAKE MIX
1 egg, slightly beaten
1 cup water
3 tbl vegetable oil

Put pancake mix in a medium bowl. Combine egg, water, and oil in a small bowl. Mix well. Add egg mixture to pancake mix. Add more water for thinner pancakes. Blend well. Let stand for 5 minutes. Cook on a hot griddle about 3 to 4 minutes, until browned on both sides. Makes 10 to 12 4-inch pancakes.

Top with apple pie syrup and a dollop of whip cream. YUM!

Remember to always check your pantry first. Always use what you have on hand FIRST. Why buy it if you already have it :)

I hope you all had a wonderful weekend. We had a birthday party for my little Miss. It was a fun day, spent with all our friends and family. I also got some canning done and quite a bit of cooking. I have a new hot dog bun recipe, homemade potato chips, and some other goodies I will be posting. Lots of yummy goodness going on this week. Be on the look out for it.


I am also working on some posts about canning and how to do it. It may take me a few weeks to get all the pictures and stuff together, but it is in the works. I have another new series in the works as well......I have been working on it for like a month, but I am moving at a snails pace:). This week I received one conventional basket and 8lbs of strawberries. I purchased the extra strawberries, since I plan on making my own jam this week. We are no longer buying store bought jam (we are saying no to high-fructose corn-syrup. That stuff is in everything). Plus homemade is always better right?!

* Add ground turkey to your shopping list if you're
adding meat to your chili this week.

Asian Chicken Wraps

2 boneless, skinless chicken breasts
2 tbl terriyki sauce
1 tsp soy sauce
3 carrots, peeled and julienned
1 handful chopped romaine lettuce
1/4 cup peanuts, finely chopped
4-6 burrito size flour tortillas
1 bag of snow peas
salt and pepper

In a bowl, marinate the chicken breasts in the terriyaki  and soy sauces for at least 30 minutes in the fridge. In a skillet, saute the chicken with the marinade for 6 to 8 minutes on each side, or until no longer pink in the middle. The cooking time will vary depending on the thickness of your chicken. Slice the cooked chicken into 1/2 inch strips.

Julienne or shred the carrot sticks and chop the lettuce.

Rinse the snow peas and pat dry. Place them in a saucepan with about 1/2 inch of water. Bring to a boil, then reduce the heat and simmer for 1 to 2 minutes. Serve the steamed snow peas with a pinch of salt and pepper.

Assemble the wraps, using chicken strips, carrots, lettuce, peanuts, and tortillas.

Serve the Asian chicken wraps with the snow peas as a side dish.

Honey-Mustard Dressing
1 tsp vinegar
1/4 cup yellow mustard
1/2 cup honey
salt and pepper

In a small jar or bottle, shake the vinegar, mustard, honey, salt, and pepper. SHake vigourously until contents is combined. Store in the fridge. I store mine in a mason jar with a label.

*Add 1 tbl of milk for creamier dressing. I did and it is SO.GOOD!


Buttermilk Pancakes
2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 tbs. sugar
2 eggs
3 cups of buttermilk
4 tbs melted butter

I put all the wet ingredients in first and then mixed them in my Kitchen Aide Mixer.
I then added the dry ingredients and mixed again.


Pour them onto a hot griddle and cook.

 
Pizza Crust
3 cups all-purpose flour  
1 package active dry yeast (2 1/4 tsp)
2 tablespoons vegetable oil
 1 teaspoon salt
1 tablespoon white sugar 
1 cup warm water 
4 tbl Italian Seasonings
  
   Put all ingredients in your mixer and mix until a soft dough ball forms.
If your dough is too sticky add a bit more flour.

Put your mixer on level 2 and let your dough knead for 5 minutes.While the mixer is doing its magic I get out my toppings. I sometimes use store bought sauce and sometimes I make it. Depends on my mood.

We love a supreme pizza. So I brown a pound of sausage and only use part.
I save the rest for other pizza nights. Cooked meat freezes great! Quick to thaw too. Just run under warm water. Defrost in just a few minutes. Roll your dough out onto your pizza pan. I use a round pan with holes on the bottom.

Add toppings like green bell peppers, fresh tomatoes, purple onions, pepperoni, sausage, mozzarella cheese. Have fun with it!

Layer on your toppings and then bake for 20-25 minutes @ 375' Brush crust with olive oil and let cool for a few minutes before cutting.

Serve it up and enjoy.


Black Bean Chili

1 cup kidney beans*
1 cup black beans*
3 medium tomatoes - diced
1 can of tomato sauce (15 oz.)
1 can of water
1 chili seasoning packet
1/2 onion chopped
1 tbl nutritional yeast (optional)**
1 cup of cooked wheat berries***


Stove Top Method: Combine your tomato sauce, water, chili seasoning packet, and onion in your pot. Stir to combine. Add beans. Heat to a nice boil. Reduce heat and allow to simmer for 15 minutes. Serve with corn bread and enjoy!

Pressure Cooker Method: Place all ingredients in your pressure cooker. Stir well. Place the lid on your pressure cooker and cook on high. Once your valve begins to rock gently, start your timer. Cook chili for 5 minutes. Rapidly cool your chili. Serve with corn bread and enjoy!

* You can use canned beans, but I like to make them myself. It is SO.MUCH.CHEAPER and super easy! You can see how to cook dry beans in your crock-pot here and in a pressure cooker here. If you do use caned beans make sure you drain them.

I didn't have any beans already cooked in my fridge or freezer, so I had to cook mine in the pressure cooker first. I cooked 1 cup of kidney beans + 1 cup of black beans, with 5 cups of water, for 25 minutes. Allow them to cool down on their own. Then use them in this recipe.

** We use nutritional yeast as a substitute for cheese and sour cream in many recipes now. It's rich in B vitamins and taste yummy!. I buy ours in bulk from Winco or Whole Foods. Perfect for popcorn, veggies, and all your favorite recipes.

*** Wheat berries are wheat before it is ground. We cook it in our pressure cooker and then store it in the fridge. We eat it for breakfast with milk and fruit. I also add it to all sorts of recipes as an extra source of protein. It is a super grain!

Keep an eye out for "specialty" bags of frozen veggies, like snow peas and sugar snap peas, to go on sale. Store in your freezer for 6-12 months.

Weekly Meal Plan #3 + Printable Shopping Lists and Recipes

 Happy Monday all! So this week we went to two stores. I had forgotten to get milk whenever I did my once a month stock up day. Don't you just hate when that happens? Luckily Hubby took the kids and went and got it for me. It was seriously such a great hour, home alone in the house. I blasted my music and got caught up on some cleaning. It was an hour well spent. I also got to pick up a basket of fresh fruits and veggies, from Bountiful Baskets and then went to Winco on Saturday. Below I have a breakdown of the costs. I am loving sharing all my shopping trips with you. It is not only great in keeping me accountable for everything I am spending, but I hope it is helping you all as well. I know once a month shopping can be hard for those with either not enough space to store food, or it may not work with the your pay days, etc. My weekly meals, recipes, shopping lists, and tips are all to help you guys and gals save more this year. I have so enjoyed the emails I have been receiving from so many of you. You guys email me, comment, or send me messages on facebook about how you are changing your lives and saving this year. I am so proud of all of you and know you can do it. Keep up the great work!!

Now onto the shopping loot.....Well I am a tad lame and totally forgot to take pictures of my basket and such Saturday morning. Since I forgot to take a picture, I decided to give you a quick glimpse into my fridge. This is exactly how it looks right now. I have leftovers in tubs, loads of fresh fruits and veggies, and our new found love...soy milk. All of these items will be used in this weeks menu. We will also be heating up leftovers for lunches and using the fruits and veggies for snacks and smoothies. Remember using what you already have on hand will save you time and money at the grocery store.

I still have a bit of my budget left, which will be used to purchase fresh produce during the month. I will also be using some of that money to pay for Miss Priss's birthday party this month. I have already purchased the cups, straws, and drinks for the party (kool-aide jammers above). I already have plates in my pantry. Now I just need to purchase the pizza and make the cake. Planning ahead has helped me to save money. I will be posting later this month on how to save while planning family functions.

When making grilled chicken, I like to generously season my chicken with my family's favorite seasonings. We usually do pepper, Lawry's, and minced onions. We cook our chicken either outside on a BBQ, on the griddle, or on our foreman grill. You can even use a frying pan to grill your chicken. Get creative with your seasonings and grill something yummy for dinner.

Nacho Pasta
1 can (11 ounces) condensed Fiesta Nacho Cheese Soup
½ cup milk
4 cups corkscrew pasta (rotini), cooked and drained

Heat the soup and milk in a 2-qt sauce pan over medium heat. Cook until hot and bubbling. Stir in pasta. Cook and stir until hot. Serve with fresh veggies and your grilled chicken.

Home-style Chicken Pot Pie
4-6 chicken breasts
2 tbl butter, divided
½ tsp salt
½ tsp dried thyme
1 (16 ounce) package frozen vegetables, thawed and drained.
1 (10 ¾ ounce) can condensed cream of chicken soup, undiluted
1 pie crust (buy or make yourself)

Cut chicken into 1-inch pieces. Preheat oven to 425'. Melt 1 tbl butter in an oven proof skillet over medium high heat. Add chicken; sprinkle with thyme. Cook and stir 1 minute. Reduce heat to medium low. Stir in vegetables, undiluted soup. Simmer for about 5 minutes.

While soup mixture is simmering, unwrap 1 pie crust (or roll out 1 homemade pie crust). Using a small cookie cutter, make several decorative cutouts from pastry to allow steam to escape (or cut slits into the pie crust). Remove chicken mixture from heat. Top with the pie crust. Melt remaining 1 tbl butter. Brush pie crust with 2 teaspoons of butter. Arrange cutouts over crust, if desired. Brush cutouts with remaining 1 tsp of butter.

Bake pie for 12 minutes or until crust is a golden brown and chicken mixture is bubbly. Serve immediately.

Pasta Primavera with Whole Wheat Bread sticks and Salad

3 cups uncooked corkscrew pasta (rotini)
1 bag (16 ounces) frozen vegetable combination
(broccoli, cauliflower, carrots)
1 jar (1 pound 10 ounces) Pasta Sauce
Grated Parmesan Cheese

Prepare pasta according to package directions in a 4 qt sauce pan. Add the vegetables during the last 5 minutes of the cooking time. Drain the pasta and vegetables in a colander and return them to the saucepan.

Stir in the pasta sauce. Heat, stirring occasionally, until hot and bubbling. Top with cheese.


Bread sticks
2 ¼ tsp yeast
1tsp sugar
¾ cup water
1 ¾ cups flour
½ tsp salt
2 tbl butter
2 tsp garlic
(I used already minced garlic in a jar)
1 tsp Parmesan cheese

Combine yeast, sugar, and water in a bowl. Mix until combined and yeast starts to bubble around the edge of the mixture. Allow to sit for 8 minutes. Yeast mixture will be bubbly after the 8 minutes. Next add flour and salt. Mix until a ball of dough forms. Knead for about 5 minutes. Allow to rest for a few minutes. Next roll out dough into an 8 x 8 rectangle. Take a pizza cutter or knife and cut strips of dough. Place on a grease baking sheet.

Ina small bowl mix melted butter, Parmesan cheese, and garlic. Brush onto bread sticks. Cook for 8-12 minutes at 500'. Serve with pasta and enjoy!


Pizza Fries

1 bag of frozen French fries
1 cup of pasta sauce
1 ½ cups mozzarella cheese
½ cup diced pepperoni

Prepare the fries according to the package directions. Remove from the oven. Pour the sauce over the fries. Top with cheese and pepperoni. Bake for an additional 5 minutes or until cheese is melted. Serve with fresh veggies and fruit for yummy healthy side dishes. This meal serves 8

Hot Ham Deli Sandwiches
3 pound of thinly sliced deli ham
2 cups apple juice
2/3 cup brown sugar
½ cup sweet pickle relish (optional)
2 tsp prepared mustard (we use spicy brown mustard)
1 tsp paprika
12 kaiser rolls (or make your own)

Place separate ham slices in the crock-pot. In a bowl combine all the remaining ingredients (except rolls) and pour over the ham. Cover and cook on low for 4-5 hours or until heated through. Serve on rolls.

I always have a lot of leftovers with this meal. You can easily serve a family of 6 with this recipe...maybe more. Depends on how many sandwiches those boys in your family eat :>

Southern Western Chicken
If you have leftover chicken from your grilled chicken night, use it in this recipe.

Leftover shredded chicken
3 tbl lime juice
2 tsp chili powder
1 can (15 ounces) black beans
1 cup corn
2 green onions (sliced thinly)
1 small handful of cilantro (chopped)
mayo to mix chicken salad together

rolls or make them

Combine chicken and mayo. Mix until combined well. Next add lime juice, chili powder, cilantro, green onions, black beans, and corn. Combine well. Serve on rolls.

Crock Pot Stew with Rolls
1 10-ounce package frozen vegetables
1 4-oz can sliced mushrooms (or use fresh)
2 1/2 lb stew meat
1 pkg. Onion soup mix
water to cover

Combine all ingredients in crock-pot, adding water to cover. Cover with lid and cook for 8 to 10 hours on low setting or 4-5 hours on high setting. Once cooked through, serve with rolls and a fresh salad or fresh veggies.

Basic Dinner Rolls Recipe
3/4 cup water
2 extra-large eggs
3 tbl butter
3 tbl sugar
1 tsp salt
3 1/2 cups flour
2 1/4 tsp yeast

Put all ingredients in your bread machine, according to your manufactures directions. Mine go in the exact order listed above.

Select the dough setting. Mine lasts 1 hr 30 mins.
Once your dough cycle is finished, punch down dough.

Let dough rest 5 minutes.

Then pull apart small sections to make balls. A little bigger than a golf ball.
It really depends on the size of roll you want. 
Just remember they will rise again.
Place them on a lined baking sheet, sprayed with Pam cooking spray.
I generously put a pad of butter on each roll.
Let rise for about 10-15 minutes.
They will rise a little, but won't necessarily double in size.
Bake at 350 for about 10 minutes. I check mine often.
Once they are light brown on top I 
pull them out and let them cool on the pan.

The ingredients for the pasta sauce are not listed in the shopping list. I have included this recipe, from last meal plan. This is included for you to use in place of the pasta sauce that is called for in the recipes this week. Be sure to add these ingredients to your shopping list if you plan on making your own pasta sauce this week.
Homemade Spaghetti Sauce
1 can (28 ounces) crushed tomatoes
2 garlic cloves
1 tbl dried basil
1 tbl oregano
1 tbl dried rosemary
1 tbl extra-virgin olive oil
salt and pepper
In a medium saucepan add crushed tomatoes, garlic, basil, oregano, rosemary, olive oil, salt and pepper to taste. Simmer sauce for 15 minutes, to allow herbs and flavors to get "happy". This sauce can be stored for a week in the fridge, 6 months in the freezer, and indefinitely if canned.

Purchase a large glass jar of yeast instead of the packets for a lower "unit" price on yeast. I purchase my yeast from Costco and store it in an air tight container in the fridge.
