Mom's Applesauce Muffins...

Morning lovelies! Are you ready for a new recipe? Today I am sharing one of my kiddos favorite muffin recipes. We love to have these for breakfast or for a yummy afternoon snack. Even hubby likes these, which is quite a compliment. Homeboy isn't a huge muffin fan, but these babies have him downing them two at a time.


These are also great to double batch and store in the freezer. Just thaw on the counter when you're ready to eat them. I usually thaw them overnight.



{Mom's Applesauce Muffins}

1/2 cup butter, softened
1 cup sugar
1 egg, beaten
1 cup applesauce
1 tsp cinnamon
1/2 tsp ground cloves
1 tsp baking soda
1 tbl ground flax seed
1 tbl ground wheat germ
1 tbl ground bran flakes
2 cups All-Purpose flour
1 cup raisins

Combine all ingredients in a bowl and stir until moistened. Fill lightly greased muffin tins 3/4 full. Sprinkle with crumb topping (recipe below). Bake at 350' for 25 to 30 minutes. Makes 12-16 muffins.

{Crumb Topping}

1/2 cup butter
3/4 cup All-Purpose flour
3/4 cup quick cooking oats
1/2 cup brown sugar
2 tsp cinnamon

Blend all together until crumbly.

Happy Monday Lovelies! Last week when it was raining here in Henderson, I posted on Facebook, asking you lovelies what your favorite rainy day activities were. A lot of you said baking. This immediately had me craving some baked yumminess. I looked in my fridge to see what I had that needed to be used up, blueberries and half and half were on the list. I then saw this awesome round up of lunch ideas and I decided on mini muffins. I love the idea of serving mini muffins, with fruit and yogurt, as a meal. Healthy, simple, and very yummy.

Mini Blueberry Delight Muffins

I used my Blueberry Delight Muffin recipe, but substituted the whipping cream for half and half. Oh and I used fresh blueberries instead of frozen. It tasted great! I cooked my mini muffins for 15 minutes @350' and then rolled them in white sugar for a topping.

Mini Blueberry Delight Muffins

These would make a great snack or a yummy side dish to any breakfast/lunch menu.

Remember when I was gushing about the library and all the fantastic books I find there? Well one of the books I found at my happy place was The Back in the Day Bakery Cookbook. This book is seriously so fun! I love all of the vintage goodness found throughout the book. The pictures are amazing! I seriously have devoured every morsel of goodness in it! It was that fantastic! To make things even better, you can now snag it on Amazon for less than $3. I was super excited and downloaded it to my Kindle Fire App yesterday afternoon. Anytime I can get cookbooks for under $4, I pounce on it. I love creating meals and treats for my family, so having cookbooks is great inspiration for me!

These muffins are inspired by ones I found in Back in The Day Bakery Cookbook. My littles gobbled these goodies up in less than an afternoon. They devoured them, which I guess means either they were super hungry or they really liked them. I'm sure it was a little bit of both :)

So get out your baking essentials and make some yummy treats for your family today. These are great for a snack, breakfast, lunch you name it!

Let's get to it :)

Blueberry Delight Muffins

Mix
2 cups all-purpose flour
1 cup white sugar
1 tbl baking powder
1/8 tsp cinnamon
1/8 tsp nutmeg
1/2 tsp salt
1/4 cup oil
4 tbl butter, melted
1/2 tsp vanilla extract
2 large eggs
3/4 cups heavy whipping cream
1 cup frozen blueberries

Topping
1/4 cup white sugar


In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt until thoroughly combined.

In another bowl, whisk together the oil, butter, vanilla, eggs, and whipping cream. Make a well in the center of your dry ingredients and mix until just combined. Do not over mix. Gently fold in your blueberries.

With a large ice cream scooper or 1/4 measuring cup, scoop the batter into prepared muffin cups. Fill them about two-thirds full. Bake at 350' for 25-30 minutes. The tops should be golden brown and a toothpick inserted in the center should come out clean. Remove from the oven and cool for 5 minutes.

Place 1/4 cup of sugar into a small bowl. Turn the muffins out onto the counter. Roll the tops of the muffins into the sugar and allow to cool completely.

*Don't have whipping cream? No worries, use regular milk or half and half :)

Apple, Oat, and Raisin Muffins

While I was watching the Duck Dynasty Christmas Special last night, I had a surge of energy. I'm not sure if it was watching Miss Kay bake or what, but I wanted to make some yummy muffins for breakfast today. So last night I decided to try out a new Gooseberry Patch Recipe I found online HERE. This was super simple to make and had my house smelling dang good! I can't wait to share these muffins with my littles this morning. I already sampled a muffin and Mmmmmm Mmmmm it was good. You're just 20 minutes aways from some home cooked yumminess.

Apple, Oat, and Raisin Muffins

1 cup raisins or currants
1 cup apple, cored, peeled, and chopped
1 egg
¼ cup oil
¾ cup milk
1/3 cup sugar
1 cup flour
1 cup quick-cooking oats, uncooked
2 teaspoons baking powder
1 teaspoon nutmeg
2 teaspoon cinnamon
¼ teaspoon all-spice
2 tablespoon brown sugar, packed + more brown sugar for topping muffins

Combine currants or raisins with apples, egg, oil, milk, sugar in a medium mixing bowl. Stir together flour, oats, baking powder, salt, nutmeg, cinnamon, and all spice in a separate bowl. Stir into raisin mixture just until combined. Divide batter equally into 12 greased or lined muffin cups. Sprinkle tops of batter with ½ teaspoon brown sugar per muffin. Bake at 400 degrees for 20 minutes or until golden. Makes one dozen.

*I also added 1 tablespoon of ground bran, ground flax seed, and nutritional yeast. This is totally optional but really nutritional
