Morning Lovelies! Today I don't really have a recipe to share, but I do have a meal idea. Every week or so, when we are rolling in lettuce from Bountiful Baskets, I like to have a make your own salad night. I usually cook some black beans in my pressure cooker, chop some tomatoes, make ranch dressing or honey mustard, and I put out any other salad toppings I can think of. This is one meal my kids actually love! Can you believe it? Kids actually wanting to eat a salad. Who da thunk it!? The whole process of making your own salad combination is fun to my littles and me too! Although sometimes I have to rein in Miss Priss. She thinks she can eat like a full grown man. Haha! Below is a list of different salad toppings. Most things you probably already have in your pantry :)

bell peppers
corn
shredded cheese

shredded carrots
sliced cucumbers
sliced mushrooms

sun dried tomatoes
red onion

grilled chicken or steak - (great use of leftovers)
hard boiled eggs

dried fruit- raisins, craisins, cherries, etc

crispy noodles
There are so many ways to make your salad night fun! Get creative and have a yummy, healthy meal!

I do something along the same line called ''make your own taco.'' It's a good way to finish off random leftover food.
ReplyDeleteI found that the trick to making my husband want to eat a salad is to include a hard boiled egg. As long as there's an egg, he's excited about salad dinners! :P
