Family Meals on a Budget: Week 1 & 2


Over the past month or so I have been debating on how to move forward with meal plan sharing here on the blog. I know that in the past I have tried really hard to share monthly menu plans. At one time I included shopping lists, while other times I only included a monthly printable. Well this year I am wanting to simplifying the process. I want to be able to share what we are eating and how we are saving and stretching our food budget, but I want to do it in a way that is easier for me to keep up with. I have decided to start a new blog series, titled Family Meals on a Budget. As I prepare and serve meals for that family of mine throughout the week, I will snap pictures and journal a bit. I then will share them in a blog post. I love seeing what others are doing for dinner. I always get so many great ideas! I hope I can do the same for you:)

As I write up my meal plans, I hope I will share with you how we stretch our small food budget. Money is tight. Our belts are on that last loop and we need to save money wherever we can. My goal this year is to learn new skills in the kitchen, try a HUGE amount of recipes out on that family of mine, and save a bunch as we do it! 

So without further ado, here is what we ate over the past two weeks (I'm playing catchup with the meal plans).

Family Meals on a Budget: Week 1 & 2 Baked Aspargus and Homemade Pasta

I received the pasta roller attachment for my Kitchenaid mixer as an early Christmas gift in November. Since then I have been loving making homemade pasta. I am still getting the hang of it, so I will not share a recipe yet. I have been using the egg pasta recipe that came with the attachment. It is quite yummy! Just like bread, once you go homemade, it is hard to go back to the store bought stuff.

I snagged some asparagus when I did my grocery shopping last week. I bought one bunch for $3.99. It was definitely a splurge veggie for me this month, but oh so worth it! I absolutely love baked asparagus. Here is the recipe I used.

On Tuesday I made Greek Eggplant Bake. For Christmas my Mom gave me a Fix-It and Forget-It Cookbook. It has been so fun to try out some of the recipes. This was one recipe Hubby was very hesitant to try, but ended up really liking. He couldn't even tell it was a meatless dish. I say that is a big success!

This was another recipe we tried from the Fix-It and Forget-It Cookbook. We had this one after church on Sunday. It was easy to throw into the crock-pot and share together when we got home. This cookbook has a quick and easy section. I think my Mom knew I need quick and easy right now in my life. It is the best!

Thursday 1/8/15- Sugar honey baked ham with sweet potatoes and veggies

Back in December, Hubby had one grocery request....he wanted me to purchase a ham. He had been craving honey baked ham with the little cloves in it. I bought all the ingredients with the plans to make it on New Year's Eve. Well we ended up going to my parents for dinner that night, so the ham was kept in the freezer. On Thursday I decided it was time to cook that bad boy. It was my first time cooking a big ham, but I think it turned out pretty well. I forgot to take a picture of it, but it was delish! I will definitely make it again!

We saved all the meat we could get off the bone (thank you Hubby for doing that task. He's the best!). We bagged it and put it in the freezer for later use. We also saved the bone to use in a recipe later in the week.

Friday 1/9/15- Chili and Fried Dough

On Friday, I needed to throw something quick together. I had lost track of time (story of my life) and needed to feed my family ASAP. I decided on chili and fried dough. Have you ever had this before? It is delish! You fry the dough in oil and then serve with toppings. We like to do chili, shredded lettuce, cheese, and sour cream. It is a family favorite! I try to keep about four cans of chili in my pantry for when dinner plans go awry. Having this as a back up keeps us out of the $5 pizza line:)

Saturday 1/10/15- Sweet and Sour Tofu Stir Fry with carrots


I like to buy a pack of tofu from Costco each month. Tofu is easy to replace meat in many of your favorite dishes. We especially like it in stir fry. For this simple dinner, I used 2 bags of stir fry veggies (frozen), 1 cube of firm tofu, and sweet and sour sauce. Three ingredients and you are good to go! We like to serve our stir fry over rice. Very filling!

If you are ever tight on money, serving your family a pantry staple like rice will keep tummies full and costs down. We buy our rice from Costco. We love their brown rice! 

Sunday 1/11/15- Slow Cooker Ranch Style Beans and Rice

This recipe was one that Hubby requested. He found the recipe online and then emailed it to me. That was his subtle way of saying "Hey Babe! I'd love this for dinner". I think it is adorable when he does this, especially when he chooses recipes where all the ingredients are in my pantry :)

Overall I felt like this was a great round up of meals I served my family. It doesn't always happen that everyone likes everything, but the past two weeks have been pretty dang good. Hopefully that means many more weeks of meals without stink faces (aren't they the best....I say sarcastically).

Bountiful Baskets Meal Ideas

Hello Lovelies! Last night Jennifer left a comment on Facebook, letting me know she checks the blog every day to see if I have posted. She said it was her way to see if I was doing ok. This really struck me. It never even occurred that someone would be looking out for me and seeing how I was doing on this blog, especially since we have never met. That is why I love blogging though. You make great friends from all over the world. Thank you Jennifer for lighting that fire under my bum. My post inspiration has returned and all of your comments with yesterdays post has encouraged me and inspired me as well.

Yesterday was pick up day for Bountiful Baskets. If you don't know what Bountiful Baskets is, you can find out about it here.  I received a bunch of goodies this week. Some I use often and others (like the jicama) I will be experimenting with this week for the first time. Since the baskets tend to be similar, depending on where you live, I thought I would share some of my ideas for using this week's produce. If you have recipes, tips, tricks, or ideas, then please leave them in the comments. Especially for that Jicama. I need all the help I can get with that one. I've never tried it before, but hear it is delicious.

So this week I received:


celery
cauliflower
asparagus x2
spaghetti squash
jicama x2
4 Chile peppers (I hear these ones are mild)
3 grapefruits (I gave these to my sisinlaw)
4 tangerines
3 apple pears
5 apples
8 pears


A lot of the fruit will be used for snacking this week. I know those pears and tangerines will not last long in this house. Some certain red heads will be gobbling them up quick.

For the vegetables I have a few things I wanted to do this week. Earlier this week I saw Spaghetti Squash Pizza Crust on A Beautiful Mess. It sounds pretty interesting. I think we will try that this week for lunch.

I have already tried this asparagus with balsamic butter sauce a few times. It is so delicious! I will definitely be making it again this week as a side dish.

For the cauliflower I want to try garlic mashed cauliflower "potatoes". They are suppose to be absolutely delicious. I am going to try this recipe here from Nom Nom Paleo.

Now for that Jicama....I have heard it is like a potato and then heard it is not like a potato at all...so I'm rather confused :) What do you guys think? I have two. I thought of trying one raw. I heard raw in a wrap or in a salad is yummy. I also read on facebook that eating it with lime, lemon, and chili powder is good. I found this recipe online for roasted Jicama and some other recipes on the facebook page that you all shared as well. How do you eat Jicama? I need some help with this one.

The kale will go into a soup. I usually do a veggie soup and throw that stuff in. My hubby loves it! We love our leafy greens!

I haven't decided on the celery or chile peppers yet...maybe in a casserole (celery) or something. Enchiladas sound yummy this week too or stuffed peppers.

Menu Plan Monday: BLT Sandwiches, Orange Pork Stir Fry, Hamburgers, and More!

Hello Lovelies! I hope you are all having a relaxing Sunday. We go to church at 9 now, so we are loving spending the rest of the day in our jammie jams and relaxing. Sundays are extra fun around these parts :) While eating lunch, hubby reminded me that I hadn't menu planned yet. He's my number one fan and is always encouraging me to keep trucking along, even if a case of the lazy's has hit. I love that man! He always puts that encouraging fire in me to get back on this blog and share with ya'll :)

This week's menu is printable and consist of three new recipes (I figured BLT night and spaghetti night you had covered) . I have included ways to make your meals stretch and roll over into other meals throughout the week as well. I always like to have a leftover day and usually a homemade pizza night on Fridays. We sometimes pair this with soda, I buy it when it is 99 cents or cheaper. This is a real treat for my littles on Fridays:) Pop in a movie and you have a quick and easy family night in the making!

This week all of my recipe's come from One Pot Meals by Gooseberry Patch. I found this gem via ebay for just a few dollars!

Meal Idea: Make Your Own Salad Night

Morning Lovelies! Today I don't really have a recipe to share, but I do have a meal idea. Every week or so, when we are rolling in lettuce from Bountiful Baskets, I like to have a make your own salad night. I usually cook some black beans in my pressure cooker, chop some tomatoes, make ranch dressing or honey mustard, and I put out any other salad toppings I can think of. This is one meal my kids actually love! Can you believe it? Kids actually wanting to eat a salad. Who da thunk it!?  The whole process of making your own salad combination is fun to my littles and me too! Although sometimes I have to rein in Miss Priss. She thinks she can eat like a full grown man. Haha! Below is a list of different salad toppings. Most things you probably already have in your pantry :)


 Salad Toppings We Love

bell peppers
corn
shredded cheese
olives
tomatoes
shredded carrots
sliced cucumbers
sliced mushrooms
beets
sun dried tomatoes
red onion
broccoli
cauliflower
peas
celery
radishes
grilled chicken or steak - (great use of leftovers)
hard boiled eggs
soy nuts

pomegranate seeds
sesame seeds
dried fruit- raisins, craisins, cherries, etc

crumbled goat cheese

tortilla strips
crispy noodles


There are so many ways to make your salad night fun! Get creative and have a yummy, healthy meal!
