Well a lot has happened in the past week. We are currently living out on our own. (we were living with my hubby's mom). It has been such an awesome change and I am excited to unpack boxes that have been in storage for the past 2 years. Anyways I am still looking for my cord so I can load all my pictures from my camera onto the computer, so since that is not happening tonight I thought I would share a super easy, super yummy recipe I used this week. So as you know we are still in boxes and I have slowly, but surely been unpacking. Because of this I choose simple meals this week that would free up a lot of my time, which I could then use for unpacking. Here was our menu for this week:
Monday: Enchiladas, rice, and beans brought by my awesome sis! Thank you Holly!
Tuesday: Bratwurst, Baked Beans, and Honeydew Melon
Wednesday: Rigatoni, Meatballs (pre-made), and garlic toast
Thursday: Crockpot BBQ Chicken Sandwiches, corn on the cob, and pistachio fruit salad.
Friday: Chocolate Chip Pancakes and bacon with fruit
Saturday: Possible doing a picnic with family
Sunday: Crockpot Roast with potatoes and Zucchini
Everything can basically be made ina short amount of time and mostly made in the crockpot. I love all the time these meals saved me this week
Now for my recipe swap this week. I wanted to share a simple crockpot baked beans recipe. Put it on in the morning and forget about it until dinner time. It is a guaranteed family favorite!
BBQ Baked Beans
2 cans of pork and beans
1 bottle of BBQ Sauce (I use the Kroger brand)
3 tbl. of ketchup
about 1/4 cup of brown sugar (I eyeball this and go with what feels right)
Pour all items into your crockpot set on the low setting and forget about till dinner time :>
** I also sometimes use bacon if I have it, but this week I forgot to thaw it out and it still was just as yummy without it**
