Morning friends!! How is everything in your neck of the woods? I feel like it has been forever since I have checked in with all you sweet friends! We've been enjoying warmer weather here. I'm none to eager for Vegas heat to come our way, but this staying in the 80's thing has been really nice. I'm hoping that our typical 100+ degree heat stays off for a mite longer. We have some pool time planned with friends this week, so a new bathing suit for this mama is needed. I crazily thought my pre-pregnancy suit would fit...I know I know....Hubby was the first to remind me that my belly has grown quite a bit over the past month and there was no way my pre-prgnancy bathing suit would fit. Well I was still convinced I might fit into it.....boy was I wrong. Haha! It was quite a scene. Oh I got it on, but not comfortably. I decided Hubby was right and I needed to just suck it up and buy a maternity suit. We do live in Vegas, where it gets really hot. I will definitely get use out of my new suit this summer. When I am large and preggo, I plan to live in the pool. It's the one thing that is going to get me through the crazy hot heat here this summer...oh and ice water. That will help too ;) I'm hoping Wal-Mart has some reasonably priced suits this week. I'm keeping my fingers crossed :)
Today I wanted to hop on here and share a quick and easy recipe with you all. This recipe was on my menu plan earlier this month. You can check out my current menu plan here. I love having quick and easy recipes to go to throughout the month. It makes cooking a lot more enjoyable when I can whip something together that doesn't take a ton of ingredients or a ton of prep time. Makes my day a bit easier :)

Root Beer Pulled Pork only requires three ingredients and is a set it and forget recipe (aren't those the best?) Place all the ingredients in your crock-pot and cook on low for 6-7 hours. Shred your pork and serve over rice, mashed potatoes, or on hamburger buns.

1 2lb pork roast
1 bottle of bbq sauce (18 oz)
12 oz. rootbeer
Place all ingredients in a crock-pot and cook on low for 6-7 hours. When meat is cooked through, shred. Serve over rice, mashed potatoes, or on hamburger buns.
