Morning lovelies! Today I am sharing one of my favorite crockpot recipes. I started using this recipe a month or so ago and have fallen in love. We love baked potatoes. We have them about once a week. They are a perfect meal to have on busy nights or on Sundays after church. I used to cook them in the microwave, but I really wanted to find a set it and forget it recipe. I first learned about crock pot potatoes on She's in Her Apron youtube channel. I can't remember which video, but she was showing some sweet potatoes she had going in the crockpot. I was so inspired I decided to try it out on some russet potatoes we had in our pantry.
My crockpot holds four large russet potatoes. I rub my potatoes with olive oil and sprinkle with salt and pepper. I then wrap them each in foil. Place them in the crockpot and allow to cook on high for six to seven hours. These babies come out fluffy and oh so yummy! These have now made it to our regular rotation. Sometime we top them with chili, broccoli and cheese, or sour cream and cheese. Usually whatever we have on hand. We make a little baked potato bar and let everyone load up their taters. It makes for a simple, yummy night :)
