Lemon Pound Cake...

Morning friends! I wanted to start off by saying thank you for all the sweet and encouraging words that were sent my way yesterday. I announced yesterday that our sweet little family will be growing this August and it was so fun to hear all your congratulations. This road to pregnancy has been long, but we feel very blessed to be able to have a sweet little peanut cooking. 9 1/2 weeks and I am loving every single minute of it :)

Now that I've been able to share that fun news with all my bloggy friends, I'm excited to get to today's post. It feels so dang good to be sharing a new recipe with you guys today. I've been spending a lot more time in the kitchen, which means more yummy recipes are being tried out. It is all a delicious result to the fact that I've been simplifying our schedule, so this mama has more time at home. My happy place is in the kitchen, so the more time I get in there the better. 

Last night was family night, which meant a yummy treat needed to be made. All things lemon have been sounding delicious to me, so I decided to embrace it and go full lemon...lemon pound cake that is :)

I got this recipe off of the Duncan Hines cake mix box. You only need a few ingredients and it is super easy to put together. That's the only type of recipes I like! Hahaha! 

I topped our cake with a lemon butter cream frosting. I made my 5 minute butter cream frosting and thinned it out a bit with a few extra tablespoons of milk and a tablespoon or two of lemon juice. I tasted it until I had reached the right lemon consistency. 



Lemon Pound Cake

1 package of Lemon cake mix
1 (3.4 oz.) package instant lemon pudding and pie filling
4 large eggs
1 cup water
1/3 cup oil

Preheat oven to 350'. Grease a 10 inch bundt cake. Combine cake mix, pudding mix, eggs, water, and oil in a large bowl. Beat with mixer at medium speed for 2 minutes. Pour into prepared pan. Bake 50 minutes or until toothpick inserted comes out clean. Cool cake on wire rack for 25 minutes. Remove cake from pan and cool completely. Top with lemon buttercream icing or powdered sugar.
