I like too cook with onions. They add flavor to so many dishes and are one of hubby's favorites. The only problem is they make my eyes water like something fierce. I am not talking a few glistening tears friends....I am talking full on water face. My eyes can not handle onions, so I have a hard time cooking with them...no matter how flavorful they may make a dish.
For a while Hubby would help me or the boy, but sometimes I don't have any other hands around to help me with the chopping. I needed to come up with an alternative. Then I remembered my food processor. I've had it for years, but it had never occurred to me to use it to chop onions. I decided to give it a try. In less than 2 minutes I had multiple onions chopped and ready for cooking. I now like to chop a bunch at once, so then I have onions for the week or I will chop and freeze onions. Either way there's less tears in the kitchen, which makes this mama very happy.
I now use my food processor to also chop veggies that I'm throwing into casseroles and soups. It makes meal prep a breeze!
What kitchen hacks do you use to make meal prep quicker?

Like you, I wash and prep all of my veggies for the week so I don't have to spend time doing it every night at suppertime. Sometimes, on Sundays, I will cook ground beef, chicken, bacon, or whatever meats I'll be using for the week so I can save myself some time on busy week nights. Not only do I get a big part of the cooking done on Sunday, but also it makes for fewer dishes during the week.

DeleteWhat a great reminder! I hate chopping onions, just so mundane! I think it's such a great idea to put them in the freezer, but do they make everything in the freezer smell like onions? If not, I'm all for it! I have so enjoyed your last few posts, can't wait to make that pound cake!!

DeleteI just food processed an onion for chili tonight~ it's a great way to go! My Mom used to do the same with green pepper, although I tried hard to avoid this if found in my food...

DeleteMy Nana wears swimming goggles when she cuts onions. Keeps the juice from getting in the eyes and is a lot easier on the wallet than a food processor. If you already have a food processor though then that's much easier :)
