Good afternoon lovelies or evening if you are on the east coast. The kids are having their computer time and I needed a bit of me time, so I put on some One Direction (my 16 year old self would be happy I still enjoy boy band music) and decided to share a new recipe with you all. Its threatening to rain outside, so I will keep this brief. I have clothes on the line that I need to pull off before the clouds decide to give the desert ground some much needed hydration. I got this recipe from Old Fashioned Country Cookies
1 cup shortening
3/4 cup brown sugar
3/4 cup white sugar
2 eggs, beaten
1 tsp hot water
1 tsp vanilla
1 1/2 cup sifted flour
1 tsp salt
1 tsp baking soda
2 cup quick cooking oats
1 cup chopped nuts (optional) --I left these out--
24 oz. pkg butterscotch chips
Mix shortening, brown and white sugars, eggs, hot water, and vanilla. Add flour, salt, and soda, stirring well. Then add oats, nuts (if using), and butterscotch chips. Drop by teaspoonfuls on a cookie sheet (I used a tablespoon). Bake at 350' for 10 to 15 minutes.
*Do your cookies sometime turn hard after a day or so in the cookie jar? Add 1-2 slices of bread to the cookie jar and close the lid. Allow to sit for a day. The cookies will absorb the moisture from the bread and be soft again!

I've been making Oatmeal Scotchies (My Mammy's recipe) for years. I think the only differences is I use butter and add 1/4 tsp cinnamon to the batter.

DeleteI love your comment about the "no store bought". My husband brought home some samples of fudgie oatmeal no bake cookies a while back--I thought they were the best cookies I'd ever had. Hungry for those one day I made a batch of my own. Not long after I found the same cookies that he had brought home at the store, so I bought some. They were just okay, I came to the conclusion that the ones I made were WAY better--and probably a lot better for me since there were no preservatives in them. This holds true with so many things too, and much less expensive. And now I'm hungry for butterscotch!
