Good morning lovelies! Last night I was in the mood for some banana bread, so I decided to go to my favorite stand by bread recipe. This is one I received from a visiting teacher about 8 years ago. My sweet VT use to bring this bread to me each month. I devoured it each and every time. Finally I begged for the recipe and she gave it to me. Since then I have been making this bread and enjoying it each time. Last night when I got out my ripe bananas, I decided to make a whole wheat version. It taste just as good as the full white flour version. The kids loved it too! So give it a try and watch your littles gobble it up as well.
Whole Wheat Banana Bread
1/2 oil
1 cup sugar
2 eggs
3 ripe bananas, mashed
1/2 tsp vanilla
1 cup whole wheat flour
1 cup white flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3 tbl powdered milk
1/4 cup craisins (optional)
1/4 cup chocolate chips (optional)
Beat oil and sugar together. Add eggs and mashed bananas. Mix well again. Add dry ingredients, milk, and vanilla. Mix well. Stir in craisins and chocolate chips. Pour into 2 greased bread pans. Bake at 350 for 1 hour or until knife inserted in middle comes out clean.
*The riper the bananas, the better the flavor.
*I usually toss in 1 tsp of bran, wheat germ, and flax seed.
*When my bananas become over ripe and I am not ready to make banana bread, I mash them and place them in freezer bags. Label them and place in the freezer. Then you can make banana bread whenever the mood strikes.

Yesterday I spent most of the morning reading the book Divergent. Have
you read it? Oh my heck it was good! I had been hearing such good things
about it, but hadn't found the time to read it. Then this week I saw
the preview for the movie and had to make the time. I am seriously
counting down the days till the movie now. Yes I am a book nerd, yes I
get excited over books, and yes I may talk about the books via text with
my sisinlaw. We get a bit obsessed about book series. We did Twilight, then Hunger Games, and now we are moving onto Divergent. What other good books have you guys been reading? I am in a sci-fi thriller mood lately. Any recommendations?

Divergent is awesome! Just read Insurgent last night. I bought it in the afternoon started it around 4 and finished it at 9. Who needs to attend to anything when you have a good book.

DeleteJust finished Divergent myself and I loved it! Need to start on Insurgent tonight. I recommend "The Selection" series. The first two books are out and the third comes out in May.

DeleteI grated just a little fresh ginger over the top of the loaf before throwing it in the oven, and it was soooo good. I'm wishing I had more frozen bananas!
