Today I am sharing a little coconut love on the blog. I made this cake quite a few months ago, but I am just getting around to posting now. I had received a coconut in my bountiful basket and had no clue what to do with it. I decided to make a coconut cake. I used my basic vanilla cake recipe. I used coconut oil instead of shortening and the coconut water (from the coconut) instead of milk. It created such a scrumptious, moist cake. I used my 5-minute butter-cream frosting recipe, but I folded in some shredded coconut. This was a perfect addition to our family night. It also helped me use up an odd ingredient in my produce basket, since I don't typically buy coconuts. So when you get an "odd to you" item in your bountiful basket, think outside the box and when all else fails, Google it. You just may happen upon a new, yummy recipe :)

looks yummy! i made a white cake the other day in the bunt pan but i colored it. the bottom was orange and then a layer of yellow. when it was done i frosted it white so it looked like a piece of candy corn when you cut a slice! it was delicious and so cute...plus the kids freaked when they saw it!!
