Sometimes when it comes to the end of the month, I have to get creative with my recipes. We were out of deli meat, so we tried a veggie style grilled sandwiches. It turned out great! I made a loaf of my white bread and topped our sandwich with tomatoes, avocado spread*, and spinach leaves. Cook like it is grilled cheese and serve with apple fries and sliced green bell peppers. We skipped the mayo this time, making this a heart healthy lunch. Enjoy Lovelies!
*Avocado Spread
2 avocados + 1/4 cup sour cream -- blend well and serve in place of mayo.
We also added some Lawry's and lime juice to taste.

Yummy! One of my favourite sandwiches has mayo, mustard, red onion, red pepper, cucumber, tomato, avocado, lettuce, cheese and lemon pepper (secret ingredient!).

ReplyDeleteThis sounds DELISH and so So Cal! MMMMMMMM... I had many years of making do when I was a stay-home mom. It taught me so many things and gave me such a peace in trying circumstances--things that would floor most people, I can just shrug off now. Wouldn't trade the experience and growth and being home with my kiddo for anything! Applause to you!
