The Incredible Egg: Tips and Tricks to Get Your Day Started Right

Now onto to today's post.....

Did you know that eggs are incredible? Eggs are low in cholesterol. They are also one of the few foods, which are naturally a good source of vitamin D. A while back I was reading a back issue of Woman's Day Magazine. I got it from the library. You can read about how I read magazines for free from the library HERE. The article gave some great ideas on how to start your morning off right. One way to start your day was with eggs. The egg is where it is at. In this article I learned a few facts about how awesome eggs are and how they can really jump start your day. Eggs are high in Vitamin D. “Vitamin D plays an important role in calcium absorption, helping to form and maintain strong bones” (Woman's Day Magazine, October 20122 Issue, pg #131). One egg contains 6 grams of protein and only 70 calories. This is great when trying to feed healthy nutrition packed meals to those munchkins of ours. I know that it can be hard to get our selves going in the morning, along with our kids and hubby's. It is for me at least. I am a snooze button feign, when it comes to the alarm. I seriously hit it at least twice each morning. My bed is just way too comfy. Oh and the fact I am a night owl probably doesn't help either. I usually need a quick breakfast idea, so we can get our day started. I know most of you are all busy ladies. Because of that, I wanted to share a few quick meal ideas. These will save you time in the morning, while feeding your family a nutrition packed breakfast.

Having a hard boiled egg and a blueberry muffin is a great option for the morning. My kids gobble these up and it is a no fuss breakfast. I don't know about you, but those are my favorite type. When I make hard boiled eggs, I place my eggs in a big pot. I add water and bring them to a boil on the stove. I let them boil for 8 minutes. When they are done, I allow them to cool. I place them in a bowl or baggie and store them in my fridge. These are great for breakfast or for a quick, filling snack.

We also love toast and over easy eggs. I am so happy my kids will eat runny eggs. This took a while for them to warm up to. Before, I always did scrambled eggs. Now they ask for the “runny eggs”. I get out my frying pan and cook three eggs at once. I have my bread in the toaster, while I make the eggs. Once the toast is done, we add some butter. This is seriously a 5 minute breakfast. Add some yummy melon and you are golden.

Another way to get your day going right is to have a coffee cup scrambler. These are so easy to make. The munchkins can even do it themselves! I am all about them doing as much of the work as possible. It gives a minute of free time and it allows them to feel the satisfaction of doing it “all by themselves”. The look of pride in my red heads face is too cute not to let them try. Although sometimes the mess left behind is a bit hard to swallow. Just look away from the mess. Remember the cute smiling “I did it face”. That is what I try to do. Now back to the scrambler....


Prep Time: 1 minute
Cook Time: 45-60 seconds
Makes: 1 Serving

What You Need:
2 eggs
2 tbsp milk
1 tbsp of shredded cheese
salt and pepper

What You Do:

  1. Coat Your mug with cooking spray. Add eggs and milk. Beat until blended.
  2. Microwave on high for 45 seconds. Stir and then microwave again. Until eggs are just set. 30-25 seconds longer.
  3. Top with cheese and season with salt and pepper.

    Here is another favorite of ours....
Baked Egg Puffs

What You Need:

2 large eggs
4 egg whites
1/2 tomato (diced)
2 tbl. shredded cheddar cheese
2 tbl flour
1/2 tsp baking powder
1/4 tsp salt

What You Do:

1. Preheat your oven to 400'. Coat 4 (1/2 cup) ramekins or coffee cups with cooking spray. Set on a baking sheet.

2. In a large bowl , whisk eggs, egg whites, diced tomato, cheese, flour, baking powder, and salt until weel combined. Divide the mixture among the ramekins or cups. Bake until the tops are puffed up and the eggs are no longer runny in the middle when pierced with the tip of a knife. 15-20 minutes. Serve with some fruit and enjoy!

I have been trying to add more eggs into our morning menu lately. My kids are enjoying it and I am getting a great start to my morning as well. For extra nutritional goodness, you can add a sprinkle of flax seed or wheat germ to your eggs. It is another way to get a little bit more fiber into your diet and not taste it. I am all about being deceptively delicious.

  2. we do eat eggs. Scrambled are my grand childrens favorite.
    My own children love eggs in a basket- an egg fried in a slice of bread with a whole cut in the center.

  3. We don't always have time in the morning before school to make a hot meal. This would actually make it so the kids were getting something hot in their bellies before school. Great idea!

  8. My girls really like egg casseroles and so if I make one on the weekend I can slice and reheat any day that week. Also the egg, cheese, salsa combo scrambled together and served in a tortilla like a breakfast burrito is a crowd pleaser. We also like baked eggs in a buttered ramekin, all the yum of a fried egg but you get to walk away and it cooks itself
