Morning friends! Last night was one of those nights where dinner didn't get made till much later than normal. We had appointments and didn't get home till about 6:45 pm. When those nights happen, it is always a temptation to hit the drive through. Tummies are grumbling and the day is getting long. We've all been there right? Thankfully I have a few quick and easy recipes in my back pocket, which are my go to when days get long.
Last night I made Beef Stronganoff or as my Dad lovingly calls it "stuff over rice/noodles". He made this quite often for us when we were young. It is a HUGE comfort food me. It takes less than 30 minutes to make. I filmed a tutorial video for you and even made a 4x6 printable recipe card. I'm having fun making these recipes cards lately. Picmonkey is addicting what can I say? ;)
Beef Stroganoff
1 lb ground turkey
2 cans cream of mushroom soup
1 cup of sour cream
1/2 onion, chopped
salt and pepper to taste
milk as needed
*I like to add in chopped veggies if we have them. diced green chiles, diced peppers, celery, mushrooms, etc.
Brown onions and ground turkey in a pan. Once cooked through, drain grease. Add soup, sour cream, and any veggies. Combine. Allow to simmer on stove for about 10 minutes. Add milk to reach desired consistency of sauce. Serve over egg noodles or rice.
