Morning lovelies!! Did you all see my weekly menu plan I posted on Monday? How do you all like the new format of the menu plans? I hope you like it and are able to gain some inspiration for your own family dinners. The more that we band together to encourage and uplift, the more that we can save our families pennies and time!
Today's recipe is one that my family ate last week. I loved this quick slow cooker recipe. It has a nice, fresh taste. The lemon juice and and feta cheese are seriously my favorite part. I am a HUGE feta cheese fan. That stuff is just too good! I look for any excuse to use it, so when I saw this recipe in my Fix-It and Forget-It Cookbook
, I knew I needed to try it out!
This is a quick and easy recipe for the crockpot, that only takes about 3 hours to be done. I also am glad I tried this recipe out because now I know how to make rice in a crock-pot. How cool! Perfect for busy days or when that rice cooker isn't clean (and you don't feel like cleaning it)....err ya know if that ever happens to you :)
So pull out that slow cooker and get dinner in the pot!
Lentil
Rice Salad Bowl
Ingredients
1 cup brown lentils
1 cup brown rice
1 onion, chopped
3 ½ cups water, stock, or a combination
1 tsp salt
¼ tsp black pepper
1 bay leaf (I didn't use this)
½ tsp ground cumin
Salad Topping:
2 tbsp. Fresh lemon juice
½ tsp grated lemon peel
2 tbsp olive oil
½ salt
2 small cucumbers, peeled and diced
2 medium sized tomatoes, diced
1/3 cup fresh basil
½ cup crumbled feta cheese
Directions
Combine lentils, rice, onion, and
water/stock, salt, bay leaf, and cumin in a slow cooker. Cook on high
for 3-4 hours, until lentils and rice are tender, but not mushy.
Remove bay leaf. Keep rice mixture in slow cooker, while you prepare
salad topping. In a medium sized bowl, combine lemon juice, peel,
olive oil, and salt. Whisk well. Place the remaining ingredients in
the bowl and mix gently. Serve salad topping over hot rice.
