Morning Lovelies! Today I have a quick and simple meal for you to make for that family of yours...seriously quick folks...it is made in under 20 minutes. When I went grocery shopping earlier last week, I snagged a bag of Fritos for $1.99. Once I found these corn chips on sale, I knew I wanted to make a Frito Taco Salad recipe for you all. I've seen variations on pinterest. Here is my version, which uses pantry staples.
I made this on Sunday and it was gladly gobbled up by all. Fritos + Cilantro + taco meat= a perfect combination. This recipe uses basic ingredients, most you may already have in your pantry :)

Let's get to it...
1 lb ground turkey
1/4 taco seasoning (or 1 packet)
2 tbl lime juice
1/3 cup chopped cilantro leaves
1 can diced tomatoes (14.5 oz)
4 cups Frito corn chips
3 cups shredded cheddar cheese
1/2 head of lettuce, chopped
Brown turkey in a large skillet. Once your turkey is cooked, add the taco seasoning, lime juice, and cilantro. Stir to combine. Next, add the diced tomatoes and corn chips. Stir well. Cook for about 3 minutes, to allow the juices to combine. Next add the chopped lettuce and cheese. Remove from heat and mix to combine. Serve with a dollop of sour cream on top. Yum!
