Are you ready for another crockpot recipe? I love my crockpot. I not only have a single crockpot, but a double one too. Have you seen those? My grandmother got me one two Christmas's ago. It is similar to this one.
It is fabulous! I was able to make my salsa chicken in one pot and cook my freezer carrots in the other. Simply fantastic. This recipe is one of my Hubby's favorite. He seriously could eat this everyday. He just loves it that much. Want to make some for your cute family this week?
Here's How:
Place 3-4 chicken breast in the crockpot
cover with 1/2 a jar of mild salsa
(I used half of a 24 oz jar)

cook for four hours on low
add 1 cup of sour cream
cook for another hour or until chicken is cooked through.
Serve over white rice with a side of yummy veggies.
Want to add an extra healthy boost to your chicken?
Sprinkle your salsa with flax seed and wheat germ. I also added some pureed carrots. It is a technique that I learned in Jessica Seinfelds Books

We LOVE this recipe in our house ... leftovers are great to add to a southwest omelette for breakfast or roll in a torilla for lunch!!

ReplyDeleteYum! I have a similar recipe that is a hit at my house...we do a jar of salsa and a packet of taco seasoning instead of the sour cream. We make tacos out of it. I would love to try the sour cream next time I make it. Sounds delish!

ReplyDeleteChicken Salsa is my favorite!! My brother taught me this one.. throw raw chicken breast in oven for 10 mins.. add salsa, back in for 10 mins.. add shredded cheese, back in for 10 mins.. and DONE!! mmm..

ReplyDeleteI take raw carrots and freeze them when I find them on sale. Those are my "freezer carrots"
DeleteI took this recipe and turned it into something new just because we loved it so much in my house. I used 5 chicken thighs (because thats what I found on sale) and cooked them in the crock pot with the salsa for 3 hours. I then shredded the chicken and added 1 c. chicken broth, a can of pinto beans (i would have used kidney but thats what I had on hand at this time), and a can of stewed tomatoes that I roughly choped. Cook for another hour and then I added a cup and a half of rice and left it alone until dinner. It was kind of a cross between a chicken chili and a crock pot taco chicken soup. So good. I have to thank you for the recipe that I spun off of. My picky little 1 and 3 year olds ate SECONDS!

ReplyDeleteabsolutely...I would place my thawed chicken in a greased baking dish. Cover with salsa and sour cream. Bake for 30 minutes or until chicken is cooked through. @350
