ok you will not believe how simple this recipe is. I learned of this recipe when the Hubbs and I were first married. It is so simple and a crowd favorite. We have this at least once a month. Ready for the 4 simple steps?
Step 1
Place 3-4 chicken breasts in a slow cooker
Step 2
Pour your favorite BBQ sauce* over them.
Step 3
Cook for 5-6 hours on low.
Step 4
Serve in lettuce, rolls, or over rice
I like to pair this with a steamed veggie and skillet potatoes or mashed potatoes.

*Homemade BBQ Sauce
This is a great substitute for store bought sauce.
1 onion, finely chopped
2 tablespoons butter
1 can tomato sauce (8 oz.)
1/4 cup brown sugar
1/4 cup honey
2 tablespoons Worcestershire sauce
2 tablespoons molasses
1 tsp dry mustard
1/4 tsp salt
1/2 tsp chili powder
1 tablespoon cidre vinegar
1 tablespoon water
Sauté
onion in butter until soft. Add remaining ingredients and stir to
thoroughly combine. Let simmer over low heat for 15 minutes, stirring
occasionally.

ReplyDeleteI made Crockpot BBQ pulled chicken sandwiches last night and everyone (even the 9 month old) LOVED them!. A couple things that can mix it up, and cut your costs...
ReplyDeleteUse 2-3 pounds of boneless skinless chicken thighs trimmed instead of the chicken breasts. Its a cheaper cut of meat and it tastes just as good!
Along with the BBQ sauce, I added 1/2 cup brown sugar, 3/4 cup italian dressing (weird right?), and 2 TBSP worchestershire sauce.

I saw a blurb about you on yahoo news this am:) I've def never been the cook, I can live off of ramen noodles and cereal but your recipes sound easy and delicious. We're in the middle of a snow storm here in MO so I can't go to the store right now.. but I looked in our fridge and pantry and I got the ingredients for this one! It's in the crock pot right now.. I've never even used the crock pot lol, thats my hubby's specialty. Question though, I used thawed chicken breasts... do you use thawed or frozen? Just wondering about the timing. Thank you!!
