Taco Soup

I have a new, yummy recipe to share with you today. We tried this out a little bit ago, and it turned out to be a pretty scrumptious hit with the family. My hubby said it was "pretty good", which for my tough critic hubby, is a compliment. I loved it and the kids gobbled it up, so I am guessing that is a good sign. Anyways on to what you need to make Taco Bean Tortilla Soup.


Here's What You Need

1 can black eyed peas *
1 can kidney beans
1 can black beans
1 can green chiles
1 can corn (drained)
1 pkg taco seasoning
3 cups water
1 lb ground beef (cooked and drained) **
1 green bell pepper diced


* For the black eyed peas I actually buy them fresh and then cook a bunch all at once. I than freeze them for later use in soups. I used one zip-lock bag full of black eyed peas. I think you buy them canned, but If not I would say about 2 cups of cooked beans would be about right.

** I've made it before with turkey and sausage, which is just as delicious.

Here's what you do:

1) Brown ground beef in a skillet. I seasoned mine with some minced onions and Lawry's seasoning salt. I then added my diced green pepper into the pan. Let simmer until meat is cooked completely through. Drain.

2) Next, add the remaining ingredients into your crock pot. Stir. Add meat and stir again.
3) Put lid on crock pot and let the soup "Get Happy", as my dad always says, for about 4 hours. Serve with tortilla chips, cheese, and sour cream.

  4. I am definitely going to be trying this recipe...but I wanted to let you know about a recipe I use for making homemade taco seasoning.

    I buy the spices at winco in the bulk for way cheaper than you could possible find them in a bottle. Then I mix up a huge batch and keep it in a spice bottle; then just use a couple tbsp instead of a packet.

    My family thinks it tastes way better anyways!

    1/2 cup and 2 tablespoons chili powder
    2-1/2 teaspoons garlic powder
    2-1/2 teaspoons onion powder
    2-1/2 teaspoons crushed red pepper flakes
    2-1/2 teaspoons dried oregano
    1 tablespoon and 2 teaspoons paprika
    1/4 cup and 1 tablespoon ground cumin
    3 tablespoons and 1 teaspoon sea salt
