Today was one of those days where you just want to find a cozy spot in the house and cuddle up with a warm blanket. The temperature outside was in the 60's, which was so very welcomed. The wind outside was howling, which mad it even more cozy being behind the walls of our home. Hearing my children giggle as we snuggle up and watch a movie was such a simple pleasure of my day today. We finished off our night with a yummy dinner of chili, Jiffy Cornbread casserole, and string bean casserole. Such warm comfort foods that finished this perfect day off just right. I am thankful for the change in weather. For this fall season where we get to see the leaves change and where we get to welcome in the new season.
Here is the recipe for Jiffy Corn Bread Casserole. It is super yummy and will be a great side dish this winter :)
1 box of Jiffy Corn Bread mix
1 cup of sour cream
1 can of whole kernel corn
1 can of cream corn
2 eggs beaten
1 stick of butter (1/2 cup)
shredded cheese just for sprinkling on top
Preheat oven to 350*
Drain the can of whole kernel corn
Mix all ingredients together in a bowl
Pour mix into a 1.5 qt greased casserole dish
Bake for 20 minutes
Sprinkle with cheese
and then bake for another 10 minutes

DeleteI have been using this recipe from the Jiffy website for years. It is delicious! I'm glad to see it being shared since many of my friends had never heard of it. My grandmother used it, as well, and would add saltine crackers and extra creamed corn and called it "Creamed Corn Casserole". I like to add a can of roasted, diced green chiles and a cup of shredded sharp cheddar. So good and gets rave reviews. I love that it will feed a crowd or just my husband and I for 3-4 meals. It always makes an appearance at our holiday meals. Just found your site via Pinterest and I like it a lot. The "Living on 14k a year" posts are wonderful! You have some really creative and great ideas for saving money. So glad I found your blog!
